I work with many clients who require purchase orders when billing. Over half of those orders (500+) are submitted, produced and shipped so we don't lose time to produce to the order while waiting for a PO. Many of those orders need statements that say "Invoice" not sales order. Because of how the system is set up, no fields can be altered after an invoice is created. Can you make a simple change to the permissions allowing Finance to change just that or certain fields after invoices are created?
